Ingredients:
10 Cod fillets (100-140g)
1g black cracked pepper
2g sea salt Maldon
25ml pomace oil
1 lemon
5g dill
Instructions:
1. Zest and juice the lemon keeping seperate.
2. Mix the oil with the lemon zest salt and pepper. Brush on to the cod. Let marinade for 2 hours
3. Set the combi oven to 130°C 40% roast 60% steam. Cook the cod for 15-20 minutes or until core temperature of 62°C has been achieved. Chill.
4. Remove the skin and blood line and break the flesh into chunky pieces or keep it whole and arrange on a platter. Sprinkle the lemon juice and chopped dill over the surface.
